As we move through fall and temperatures are decreasing, restaurant operators need to be weary of what that means for kitchen equipment. Just as the summer heat can impact the performance and stability of equipment, so too can cold and freezing weather. Though it may be tempting to wait until said temperatures arrive, it is actually far better to prep in advance.
One example is with furnaces. Furnace components can be damaged by higher temperatures, which obviously won't do when it comes time for snow and ice. It is important to check this equipment before then and inspect for anything that may be loose, broken, or out of place in order to avoid malfunctions when you need the furnace most. Oven hoods should also be inspected as well, particularly the balance between outgoing and make-up air.
Of course, freezing is a possibility during the winter season. This can negatively affect equipment such as grease traps. Frozen grease can harden and block incoming substances and materials, causing drains to back up. Thus, it is important to clean such equipment to account for freezing temperatures and the complications they can cause. Similarly, water lines connected to equipment can also freeze up and cause problems. One fix for such issues is to utilize heating systems to keep those parts from freezing over.
Through thorough maintenance and inspection, along with the installation and use of heating systems, a restaurant owner can be fully prepared to deal with winter weather and its impacts on service. The key is to be proactive and explore any opportunities to reinforce and support infrastructure.
