In the past, it was commonplace to have two separate food production lines: one for in-person diners and one for drive-thru customers. Now, however, it is more efficient and prudent to combine the food lines. This ultimately makes it easier and faster to serve customers regardless of which format they fall into. Good drive-thru design starts with the layout and spacing. Employees need to be able to serve customers quickly and carefully, so as to not injure themselves or drop or spill items. They need to be able to get from the restaurant to the customer and back with little effort in order to keep the flow of service going. Additions like landing areas should be implemented to give employees ample workspace.
One important thing to note is the way employees turn to customers from behind the service window. It is best to have employees pivot to customers rather than have to fully turn around to face them. This way, accidents are minimized, and service can be expedited.
Technology continues to be a critical element of drive-thru design. This includes features like digital menu boards that log orders, improved sound systems that enhance communication between customers and employees, and more. On top of that, many fast food restaurants have branched out into dedicated spaces for online orders as well as infrastructure for tracking and processing those orders. These elements show customers that the establishment embraces modernity and current trends.
