Food processors are nifty devices that handle slicing, dicing, chopping, coring, and many other tasks that require bladed instruments. Their ease of use may lead one to wonder: are they worthy substitutes for knives? The answer to this question may be a little more complicated than it appears.
Perhaps the greatest asset of food processors is that they are multipurpose and versatile, as previously mentioned. However, surprisingly, food processors are not necessarily perfect when it comes to the kinds of cuts they can make. Consumer Reports tested a food processor against a chef's knife and found that while the processor could make chopped onion faster than doing it by hand, the resulting product was uneven and some onion chunks were larger than others. So, despite their speed and usefulness, the results of using a food processor may not necessarily be ideal. It is up to the chef to use the equipment carefully and thoughtfully to avoid that.
But with all of that said, knives are not necessarily better than food processors. For starters, to come even close to outpacing a processor with a kitchen knife, one would need years of experience and a great deal of caution. Additionally, there are some situations that a knife would not be ideal for. For example, knives are generally not a good pick for cutting dough. In this situation, it would be better to have a food processor to not only reduce the amount of physical effort needed to complete the task, but to do so in a safe and efficient way.
Ultimately, it is best to balance the use of food processing equipment and knives. They each specialize in their own ways, and together, they make up for each other's weaknesses. Having both is a great way to resolve any of your chopping or cutting needs.
