The minds at Matfer are shaping the future of cooking utensil design. That future is exoglass.
Patented and developed in 1989, exoglass is a polyamide material used in Matfer kitchen utensils, such as baking molds. One of the defining characteristics of a Matfer exoglass utensil is the nonporous and injection-molded design. These utensils have a single-piece construction, meaning they do not have any rivets, creases, or other seams that are commonly found in other brands' utensils.
Exoglass utensils also do not retain aromas. This is a benefit for two reasons. First, it means that cleaning the utensils is easier in that smells won't stick as easily. Second of all, it means that said smells can't mix with that of other food, meaning that the utensils can be used for a variety of different scenarios without fear of ruining a dish's flavor or smell.
The most impressive thing of all when it comes to exoglass as a material is its durability in extreme temperatures and environments. Exoglass does not expand with heat or steam, nor does it contract when exposed to cold. This means that users need not worry about exoglass utensils bending out of shape or breaking due to temperature extremes, and greatly contributes to the lifespan of these utensils.
Matfer's exoglass utensil line represents a revolution in cookware. With its durability and versatility, it is very much a valuable ally in any restaurant's kitchen.
